Note: These Apple Cider Waffles are subtly sweet. If you prefer a sweeter waffle, you can add 1-2 tablespoons of honey or maple syrup to the batter.
Spiced Apple Cider Waffles
Ingredients:
Recipe makes about 3 cups of batter.
2 cups (200g) loosely packed almond flour (like THIS)
1 cup arrowroot flour (like THIS)*
2 teaspoons grain free baking powder (like THIS)
1 1/2 teaspoons ground cinnamon
rounded 1/2 teaspoon ground nutmeg
1/2 teaspoon ginger powder
1/4 teaspoon salt
4 Large eggs
1/4 cup melted Tin Star Foods Brown butter ghee* (lukewarm not hot)
1 cup apple juice or apple cider
Optional: 1/4 cup minced apple pieces.
*Can sub sustainable palm shortening for ghee
Method: Preheat your waffle maker (I use THIS one)
1. In a small sauce pan, over medium-high heat, bring the apple cider to a boil. Continue to cook until it is reduced by half the volume, or about 1/2 cup. 2. In a large bowl, whisk together the flours, baking powder, spices and salt until well blended. If adding the minced apple pieces, add now and toss to coat with the flour mixture.
3. In a separate bowl, whisk together the eggs, 1/4 melted ghee and reduced apple juice/cider, until just combined.
4. Add the egg mixture to the flour mixture and whisk well to form a smooth, somewhat runny batter.
5. Cook according to your waffle makers instructions. Mine are generally done after 2 minutes and I use about 1 cup of batter per waffle (for my Belgium waffle maker). But all machines can be different, so see what works for yours!
Serve with thinly sliced apples if desired, ghee, maple syrup and maybe some whipped coconut cream!
Storing: Can be stored in an airtight container, in the fridge for a few days. But they are best eaten day of. Freezing is also a great option!
